I'm Denise Canellos, a Board Certified Nutritionist, author of Calm Your Inflammation, and university professor, specializing in effective nutrition therapy for cancer and chronic disease treatment. My husband George was diagnosed with colon cancer at 38. It was devastating for our family when George died from his cancer. I felt a pull to help others navigate the confusing world of healthcare and nutrition. After earning my MS in Human Nutrition, I passed my American College of Nutrition Board exam and started using science to help people like you get back their health and their hope.

I specialize in helping individuals and families optimize their health, well-being, and eating behaviors. I offer personalized nutrition counseling using a non-diet, weight-inclusive framework, which means I don’t focus on body size or prescribe eating rules to follow. Instead, I use a client-centered model of care and serve as a guide on the journey to better health and wellness. My approach incorporates evidence-based nutrition principles along with an understanding of human behavior and psychology. This process looks different for everyone; there is no “one size fits all.”

The best part of working with my clients is seeing the mental shift that occurs with nutritional therapy. I work with a lot of people who have been imprisoned by restrictive diets and have beaten themselves up for years because they feel like a failure. At Nutrition Unveiled, the most important thing that occurs is developing a positive relationship with the mind, body, and food, and learning to nourish and treat the body rather than deprive and hurt the body. Happiness creates a much deeper level of health than any number on the scale ever will!

All clients are ideal...they come with their own individual nutrition issues. As a Registered Dietitian it is my hope that we can come up with a plan of action to meet their needs. By giving the client time to communicate what they have been dealing with and coming up with goals together....the support can come in a gentle and nurturing environment. Many clients come in not knowing what to expect or are scared of making changes. That is not unusual. Helping them see what they can accomplish and breaking it down into manageable pieces can decrease the anxiety of coming in.

I’m Carly - a RD-N specializing in eating disorders, disordered eating, mental health, & body image. My clients and I work 1:1 at the outpatient level to support their individual health concerns. Not all of my clients have diagnosed eating disorders - some of them have developed habits over the years that they'd like to change, need accountability for their health and wellness goals, or thanks in part to media representations about how we "should" look or "should" eat or "should" exercise, they just got confused along the way of how to relate to their own body. We fix that here.

Clients who seek to work with Amy have often pursued other avenues of nutrition management, including diets, traditional meal plans, and other healthcare professionals as a means to meet their goals. Frequently, Amy provides a more in-depth examination of external tools, and encourages clients to inquire within and challenge themselves to view their food and their relationship with the body and self differently. In our current health climate, Amy also sees a number of clients who seek to address gastrointestinal conditions and autoimmune issues that interfere with feeding themselves and promote or encourage disordered eating.

Food Allergy Nutritionists and Dietitians
What does it mean to have a food allergy?
A food allergy occurs when the body's immune system mistakenly identifies a specific food as a threat and mounts an immune response against it. The severity of food allergies can vary widely, ranging from mild reactions, such as hives or stomach discomfort, to severe cases like anaphylaxis. Anaphylaxis is a life-threatening condition characterized by a whole-body immune response that can cause symptoms such as swelling of the throat and difficulty breathing. While mild symptoms often resolve on their own, severe reactions may require emergency medical intervention. In such cases, epinephrine is commonly administered to relax the airway muscles and facilitate breathing.
Can a food allergy be cured?
There is little evidence to suggest that food allergies can be cured, and those with severe allergies are often guided to always take significant precaution when consuming foods that could potentially contain or be cross-contaminated with a major allergen. That said, food allergies are more common in children, and many allergies are actually outgrown as a child ages and develops a more robust immune system. Recent research has also suggested that exposure to certain common allergen foods, such as peanuts, early in childhood can reduce the risk the child goes on to develop an allergy to that food in their adult life.
How do I know if I have a food allergy?
Individuals can identify a food allergy by recognizing symptoms that appear after consuming a specific food. Common symptoms of food allergies include hives, itchy skin or mouth, dizziness, nausea, vomiting, stomach pain, and difficulty breathing. These symptoms usually occur immediately after eating the allergenic food, although in rare cases, they can develop more slowly.
How can a dietitian help someone with a food allergy?
Dietitians play a crucial role in assisting individuals with food allergies, especially those with multiple allergies that complicate their ability to maintain a balanced diet. They can help ensure that clients receive all essential nutrients while avoiding foods that could trigger severe allergic reactions. Dietitians are also knowledgeable about which foods pose a high risk of cross-contamination and can advise on strategies to prevent accidental exposure. Additionally, dietitians can help distinguish between food allergies and food intolerances—two related but distinct conditions. Food allergies involve an immune response, while intolerances typically involve digestive issues. Accurate diagnosis of these conditions enables clients to make informed decisions about symptom management and dietary choices.
