She then worked for Kaplan University for their Nutrition Department as an adjunct instructor. She has also worked as a clinical dietitian for Good Samaritan Hospital. As an undergrad I participated in research related to diabetes, weight loss, physical activity and public health. I completed 1200 hours of supervised clinical training from Uchicago Medicine Ingalls memorial Dietetic Internship program. Melanie Lewis is an experienced registered dietitian living in Chicago. Her curiosity for food and nutrition began at a young age harvesting and preparing the fresh fruits and vegetables grown right in her own backyard. She completed her bachelor’s degree in Nutrition and Dietetics at Penn State University. After graduation, she traveled to New Orleans, Louisiana to complete over 1000 hours of supervised practice at Tulane School of Public Health and Tropical Medicine. Her experience has allowed her to provide evidence-based nutrition education to diverse populations with a variety of nutritional needs.

Beth has been working for over five years as an inpatient, outpatient and long-term care Licensed Registered Dietitian. Elisa Stegman is a Board Certified Registered Dietitian Nutritionist. She completed her BS in Dietetics from Iowa State University and her MS in Clinical Nutrition from University of Wisconsin. Elisa is Chicago-based with several years of both pediatric and adult clinical experience at the University of Iowa and Lurie Children's hospitals. She is a Certified Nutrition Support Clinician and is also currently working toward a certificate in Integrative Functional Nutrition. Elisa believes in approaching health from a holistic perspective and the value of using food as medicine.

Majority of my experience has been at the inpatient level of care, most recently serving as the Supervisor of Dietitians and Inpatient Eating Disorder Program at a behavioral health hospital. I have also worked in transitional living, partial hospitalization (PHP), intensive outpatient (IOP), and outpatient nutrition counseling. As a Certified Eating Disorder Specialist (CEDS), I work throughout the spectrum of eating disorders with all aged individuals.
