I earned a Masters of Science in Dietetics at Eastern Illinois University and worked as a Sanitarian completing Health Inspections for the local community prior to becoming a Registered Dietitian. My career path has allowed me to work in a variety of settings and gain in-depth knowledge on multiple nutrition related topics. Eric Meredith is a Registered Dietitian, Classically Trained Chef, and Certified Personal Trainer with over 10 years' experience working with a wide variety of clients including Type 1 and 2 diabetics, athletes, cancer survivors, individuals with digestive disorders, and those who are looking to better manage their weight. I am a Registered Dietitian licensed to practice in Illinois. I received my Bachelors in Nutrition Science with a minor in biological sciences from University of Illinois at Chicago. As an undergrad I participated in research related to diabetes, weight loss, physical activity and public health. I completed 1200 hours of supervised clinical training from Uchicago Medicine Ingalls memorial Dietetic Internship program. During my training I did research on nutrigenomics, diabetes, and weight loss.
