I was a very picky eater (sorry mom and dad!), and decided early on that I would be a vegetarian. As I’ve gotten older, I have expanded my food palate, but I’ve always stuck with the morals of eating foods that help me feel good and I believe that is a guiding principle of overall health.

My name is Michel Harris and I have been a Registered Dietitian since 2000 and a Certified Diabetes Care and Education Specialist since 2010. I completed my undergraduate and graduate studies at Benedictine University before by internship at Hines VA Hospital. Some of my past work experiences have included long term care, foodservice management, private practice serving individuals with eating disorders, and inpatient positions in hospitals. My passion for teaching the future generation of nutrition professionals led me to start teaching in 2018.

Eric Meredith is a Registered Dietitian, Classically Trained Chef, and Certified Personal Trainer with over 10 years' experience working with a wide variety of clients including Type 1 and 2 diabetics, athletes, cancer survivors, individuals with digestive disorders, and those who are looking to better manage their weight. Eric graduated from the University of Illinois at Chicago with a Master of Science in Human Nutrition and Master of Education. He is also a Certified Health Education Specialist.
