Eric Meredith is a Registered Dietitian, Classically Trained Chef, and Certified Personal Trainer with over 10 years' experience working with a wide variety of clients including Type 1 and 2 diabetics, athletes, cancer survivors, individuals with digestive disorders, and those who are looking to better manage their weight. Eric graduated from the University of Illinois at Chicago with a Master of Science in Human Nutrition and Master of Education. He is also a Certified Health Education Specialist. As a former collegiate athlete, Abby is a registered dietitian passionate about the intersection of nutrition for sports performance and intuitive eating. She completed her bachelor's degree in dietetics at Olivet Nazarene University, her dietetic internship at OSF Saint Francis Medical Center, and her master's degree in applied exercise science through Concordia University Chicago. Abby has experience working with youth, collegiate, and professional athletes as well as adult and adolescent eating disorder patients at multiple levels of care.

When I initially pursued a career in nutrition I was drawn to the idea that something as basic as food could have such a profound effect on health. I was born and raised in north Florida and now reside in central Florida with my husband, son, and dog.

I have experience in a variety of healthcare settings including hospitals, long-term care, rehabilitation, outpatient counseling, and higher education. I have a BA in Dietetics from the University of Northern Colorado and an MS in Applied Nutrition from the University of New England. Living with GI disorders is difficult and I want to help my patients get out of pain and feel healthy again. I have a certificate from Monash University in low FODMAP-Diet instruction, which is used in IBS.

Nicholas is a Registered Dietitian Nutritionist who graduated with a B.S. in Nutrition and Food Science with a concentration in Dietetics and completed dietetic training with a focus on disease management and health promotion at Vanderbilt University Medical Center in 2018. Nicholas has also completed training in the FODMAP diet for Irritable Bowel Syndrome (IBS) through Monash University. Nicholas knows firsthand the devastating impact chronic diseases have on someone's life, and it is what drives him in his career as a dietitian.

I was born and raised in Chicago, attended the University of Dayton for undergrad (Go Flyers!) and received my master's degree at Central Michigan University. I currently work at the University of Chicago as the liver transplant dietitian, specializing in all types of liver disease. I also own my own consulting business which has allowed me to broaden my expertise to serve an even wider variety of patient populations. When I am not working, I am spending time with my family- my husband, Kevin, and my two young (crazy) boys, Marty and Charlie, and have one more on the way!
