I am a Registered Dietitian licensed to practice in Illinois. I received my Bachelors in Nutrition Science with a minor in biological sciences from University of Illinois at Chicago. As an undergrad I participated in research related to diabetes, weight loss, physical activity and public health. I completed 1200 hours of supervised clinical training from Uchicago Medicine Ingalls memorial Dietetic Internship program. During my training I did research on nutrigenomics, diabetes, and weight loss.

I am a registered dietitian (RD) and a certified nutrition support clinician (CNSC) with 12 years of experience providing medical nutrition therapy. I have an undergraduate and a graduate degree in nutrition and dietetics and I am currently pursuing a doctorate degree in clinical nutrition to further advance my knowledge and skills as a RD. I am very passionate about helping others and I strongly believe that non-communicable diseases such as diabetes, heart disease, etc. are preventable by making certain lifestyle changes and I aim to provide sustainable ways to make those changes rather than a "diet" approach.

Brooklyn is a Registered Dietitian Nutritionist (RDN) who earned both her Bachelor of Science in Community-Medical Dietetics and Master of Science in Nutrition Science degrees from Viterbo University in La Crosse, WI. She also completed her 1,200+ hour dietetic internship that focused on both community and clinical dietetics. Hi! My name is Kelsey and I’ve been a Registered Dietitian since 2014, licensed in the state of Illinois. I’ve always had an interest in food, which started in childhood. I was a very picky eater (sorry mom and dad!), and decided early on that I would be a vegetarian. As I’ve gotten older, I have expanded my food palate, but I’ve always stuck with the morals of eating foods that help me feel good and I believe that is a guiding principle of overall health.

Stacey Simon is a Registered Dietitian-Nutritionist with a passion for serving the adult and older adult population. She has worked with thousands of clients with a variety of nutrition concerns, including unintentional weight loss, high blood pressure, diabetes, chronic kidney disease, heart health, healthy aging, and general wellbeing. She has a Master of Science (MS) in Clinical Nutrition from New York University and a Bachelor of Science (BS) in Nutritional Science from the University of Connecticut. She is board certified as a Specialist in Gerontological Nutrition (CSG), which makes her an expert in Older Adult nutrition.

My name is Michel Harris and I have been a Registered Dietitian since 2000 and a Certified Diabetes Care and Education Specialist since 2010. I completed my undergraduate and graduate studies at Benedictine University before by internship at Hines VA Hospital. Some of my past work experiences have included long term care, foodservice management, private practice serving individuals with eating disorders, and inpatient positions in hospitals. My passion for teaching the future generation of nutrition professionals led me to start teaching in 2018.

She completed her internship at the University of Wisconsin Hospital and Clinics in Madison after graduating from the University of Wisconsin Stevens Point. She has experience providing Medical Nutrition Therapy in clinical nutrition, hospitals, outpatient clinics and dialysis centers. She is also a Certified Diabetes Care and Education Specialist. Dawn’s appreciation for food started at an early age, while growing up and working in her family’s diner. This developed into a passion for nutrition and how food can help with healing and overall wellbeing.

Jessica became a Registered Dietitian Nutritionist after completing her Dietetic Internship and master’s degree in Clinical Nutrition through Murray State University, Kentucky. She has been afforded the opportunity to work in many clinical settings throughout her career, including rehab facilities, small and large hospitals, and within physician’s offices in addition to one-on-one clients. In my undergraduate program at Benedictine University, I was awarded the community nutrition award; which is awarded to dietetic students that provide service to the community through nutrition. Fast forward a few years, and I have been a dietitian for almost 4 years. It is enlightening to see how much has changed since the beginning of my career. As well as how much I have learned and grown throughout while educating clients about their nutrition needs.
